One time when Ed and I went to Bob Evans for breakfast, we had what they call "the Sunshine Bowl" or something like that. Anyway, I now make this at home for us on occasion and we just love it! It takes a bit of effort but is it worth it! And I will tell you right up front, folks, it ain't diet food! *grin* Sooooo....for those of you who might want to give it a try, here is the recipe and it serves two generously!
4 eggs
2 baked potatoes/cooled
2 envelopes of country gravy mix
6 slices of bacon/ 1/2 lb. of sausage browned
1 tomato/ diced
1 16oz. pkg. shredded cheddar cheese
Beat 2 eggs thoroughly. Fry these in a small/medium skillet. If you have trouble flipping them in one piece, place a lid over the skillet. This will cook the egg on top. Slide the egg round into a shallow bowl. Do this with the next two eggs, too.
Dice the potatoes and brown them in the skillet, adding some oil if needed. I don't peel the potatoes because we like the skins, but you might like to.
Microwave the bacon until crisp. Crumble.
Prepare the gravy according to directions on the package.
Divide the potatoes and put on top of the egg in each bowl. Divide the bacon and sprinkle over the potatoes. Do the same with the diced tomato. You can also cook some other vegetables with potatoes if you like, i.e. onions, green pepper, mushrooms. Top all of this with an ample amount of gravy. Top the gravy with a generous amount of cheese. I sometimes microwave the whole thing to melt the cheese a little more, but most often the hot gravy melts it adequately. Serve with toast and a beverage!! This will stick to your ribs!!
