A Peters' family tradition recipe

My maiden name is Peters just in case some of you were wondering where the name fits. *smile* Anywayyyyy, many moons ago, my mother began making this dessert for family gatherings and then my sister-in-law Cheryl began making it. We can't have a family get-together...mostly, Easter, Thanksgiving, and Christmas.....without having Cherry Whip and no one can make it like Cheryl or as Mom did. Isn't it weird how not just anyone can make some dishes, no matter how hard we try?
Here is the recipe for you to try....it is worth the effort!


CHERRY WHIP
2 cups Graham cracker crumbs
1 stick of butter/margarine
3 Tbs. of powdered sugar
2 envelopes of Knox gelatin
2 pkgs of Dream Whip
1 cup of cold milk
2 tsp. of vanilla
1 cup of sugar
11 oz. of cream cheese
2 cans of cherry pie filling
Mix graham cracker crumbs, butter, powdered sugar, 1 envelope of
Knox gelatin and pat into a 9 X 13 dish. Sprinkle one
envelope of Knox gelatin over this and set aside.
Mix 2 pkgs. Dream Whip and 1 cup of cold milk. Beat until stiff peaks form.
It is best to beat the Dream Whip in a bowl that has been chilled
in the freezer for awhile. Add 2 tsp. vanilla and the sugar. Add
cream cheese that has been softened and creamed.
Put this mixture on top of the graham cracker crust.
Top with two cans of cherry pie filling. Refrigerate until thoroughly
chilled.
This is so refreshing. It is like a lite version of cherry cheesecake.
The filling is light and fluffy!
